Mangfallblau – The Factory Restaurant

The world’s first restaurant in a paper factory

Innovations abound in the Mangfall Valley, where Gmund Paper has now opened the world’s first restaurant in a paper factory. The name “Mangfallblau” means “Blue as the Mangfall River” and pays tribute to the river that flows past the Gmund Paper Factory.

The restaurant breathes new life into the former pulp storage depot, where guests now encounter exposed ceiling conduits and partially unplastered walls. Foods and beverages meet industrial design in a restaurant with a casual but stylish concept that’s ordinarily found only in the world’s trendiest metropolises. Dine with a view of pulp bales or simply sip a cup of coffee at a wooden table crafted from smoked oak.

A sketched model of the paper production hangs on the wall inside the so-called “White Lab,” a self-contained space separated from the surrounding restaurant by floor-to-ceiling windows. A technology utilized nowhere else in Germany sets the machinery in motion and shows interested visitors the pathway from raw pulp to finished Gmund papers, which are successfully exported around the world.  

Mangfallblau restaurant is open to the public on weekends. For a relaxing start with an after-work drink on Friday evening, for nibbling a piece of cake at teatime, for a carefree supper or a leisurely Sunday brunch: Mangfallblau is for everyone.  

The menu features regional products, including many homemade items, such as lemonade, smoked trout, Röster (bread and fruit spread) or unique Mangfallnudeln (homemade noodles). The chefs impress their guests by skillfully combining simplicity and the highest quality.

We want to be a creative workshop and a design center,” says owner Florian Kohler. Numerous international brand managers are already frequent visitors. 

During the week, Mangfallblau hosts workshops, brainstorming sessions and meetings. Creative individuals from around the world appreciate the premises’ unique atmosphere, which sparks their creativity and encourages their thoughts to flow freely. The restaurant also serves as a cafeteria for Gmund’s staff.
